Training in any modern business faces several common challenges but the hospitality industry faces more than most: high staff turnover, a mix of tangible and intangible skills and a lack of a formal curriculum and qualifications. Add to this that most front line employees are “only passing through” the industry while they study for a career in another industry (or waiting for a call from Steven Spielberg to star in his next film!) and it is easy to understand the unique and daunting task we operators face.

Far too often hospitality training is done on an ad hoc basis, either relying on internal role models to pass on their experience (but rarely with great training skills), hiring bartenders with the wrong attitude ‘because of years of experience elsewhere’ or hoping that a manager 'will have a chance to spend some time' with the new recruit. There never seems to be enough time…
